Description
The grapes come from 5 different plots, 3 in the Gaia-Principe MGA and 2 more in Cottà MGA, one of which is entirely planted with Nebbiolo Rosé. The grapes are picked separately then crushed, destemmed then put into different types of vats (cement, oak, stainless steel) and macerated for 3 days before fermentation starts. Regular pump-over and punch downs are performed during the fermentation. After that a 15 day maceration takes place. Then the wine is racked to botti, tonneaux and barrels where MLF takes place. Aged in the same oak vats for 24 months, then blended 1 month before bottling.
