Description
The grapes come from the second oldest Chardonnay vineyard in the Langhe, planted in 1985 by the current owner's father, currently within the Gaia-Principe MGA of Barbaresco DOCG area, designated in 2007. After picking the grapes are destemmed and pressed. Floatation is used in order to clean the must (a faster & more “green” method) instead of decanting. The fermentations takes place in an old French oak tonneau (5 hl) and a new barrique without temperature control. The wine is aged in the same barrels for 29 months with regular bâtonnages.
