Description
The grapes come from the second oldest Chardonnay vineyard in the Langhe. The grapes were harvested about 20 days before the ones destined for our Chardonnay cru Gaia-Principe, making a selection in the vineyard and picking only the least ripe bunches. Then the grapes are destemmed, pressed, the must undergoes floatation for clearing. Fermentation and aging in stainless steel for 6 months before the "tirage". The aging in the bottle is almost equal to that of the Alta Langa. This is the first "trial edition" of our sparkling wine series, later we added a Pinot Noir and a Nebbiolo (all white).
