Description
Pressing and destemming of the grapes followed by maceration and fermentation at a controlled temperature of 22-26°C for 8/10 days. At the end of December, the Valpolicella Superiore is passed over the skins of Amarone, to acquire more body and complexity. The wine matures in 5-20-40-hectolitre, French and American oak barrels for 12 months. Complex plums and sour cherry aromas combine with spicy notes of vanilla and cocoa. Intense, concentrated fruit on the palate, balanced by soft, ripe tannins. Persistent and elegant on the finish.
