Description
The grapes used to make this wine are grown on one of the highest fields in the area at more than 500 meters above sea level. It is harvested during the coolest hours of the day, with the use of dry ice to preserve the grape’s character, then immediately brought to the cellar for a process of crio-maceration at 0°C during 24 hours to extract all the aromas contained in the skins. This is a fragrant, fresh and very mineral wine.
